The prestigious Blue Lion of East Witton is celebrating the very best of Yorkshire produce in their inaugural Yorkshire Tasting Menu on September 10th. The evening showcases the finest, locally sourced ingredients in a mouth-watering six course menu with each dish paired with either matching wines, port or cider. We are honoured that our Clotted Cream, which is made in our dairy at High Jervaulx with only the whole milk from our herd of Guernseys, has been chosen to be served alongside lightly poached East Witton plums- you couldn't get much more local.
Up here on the farm we continue to make our clotted cream in the traditional way by gently scalding & cooling overnight. All of the cream used is from our own Guernseys who produce a golden whole milk which is perfect for producing Clotted Cream- the high butterfat ratio & beta carotene creates a beautiful golden crust on the top which acts as a protective seal of freshness for the deliciously silky cream below.
